Coconut Banana Fiffins

Healthy muffins that we serve for breakfast at our gan:

1 cup whole wheat flour

2 tablespoons ground flax

1/2 teaspoon baking soda

1/8 teaspoon salt

1/2 cup coconut milk

2 tablespoons coconut oil

2 very ripe bananas

1 teaspoon cinnamon

1/2 teaspoon vanilla

*optional: add 3 cooked and mashed sweet potatoes!

Combine all ingredients, add baking soda last. Spoon into muffin tins and bake at 170C for 40 minutes. Makes 10-12 muffins.
