Vegan Veggie Burgers | Healthy Recipe

The kids at our nursery just love these, you think a 1 year old can’t eat their veggies? Try these ;)

Vegan Veggie Burgers

6 large potatoes (boiled and mashed)

3 zucchinis (chopped very fine)

1 onion (chopped very fine)

3 cloves garlic (chopped very fine)

2 cups oat flour (I put whole oats in a coffee grinder. Other flour can be used)

1/2 cup coconut or almond milk

6 tablespoons olive oil

1/2 cup chopped coriander

1/2 cup grated carrot

1 cup cooked lentils

2 tablespoons each: paprika, curry powder, rosemary

Salt and black pepper to taste

Combine all ingredients. Form into patties and pan fry in olive oil (recommended!), or spoon into muffin cups and bake at 170C for 40 minutes. Enjoy! *This makes a Mishmish sized batch*
