Coconut Banana Fiffins
Healthy muffins that we serve for breakfast at our gan:
1 cup whole wheat flour
2 tablespoons ground flax
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup coconut milk
2 tablespoons coconut oil
2 very ripe bananas
1 teaspoon cinnamon
1/2 teaspoon vanilla
*optional: add 3 cooked and mashed sweet potatoes!
Combine all ingredients, add baking soda last. Spoon into muffin tins and bake at 170C for 40 minutes. Makes 10-12 muffins.

Vegan Veggie Burgers
6 large potatoes (boiled and mashed)
3 zucchinis (chopped very fine)
1 onion (chopped very fine)
3 cloves garlic (chopped very fine)
2 cups oat flour (I put whole oats in a coffee grinder. Other flour can be used)
1/2 cup coconut or almond milk
6 tablespoons olive oil
1/2 cup chopped coriander
1/2 cup grated carrot
1 cup cooked lentils
2 tablespoons each: paprika, curry powder, rosemary
Salt and black pepper to taste
Combine all ingredients. Form into patties and pan fry in olive oil (recommended!), or spoon into muffin cups and bake at 170C for 40 minutes. Enjoy! *This makes a Mishmish sized batch*
This is a yummy, healthy, easy to make vegan breakfast for your kids. We make it at our Tel Aviv nursery and the children love it, especially the caramelized baked peaches :)
Baked Peach Almond Oatmeal:
2 cups rolled oats
1/4 cup date or coconut sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups almond milk
3 tablespoons coconut oil
1 1/2 cups chopped peaches
Peach slices for the top
1. In a baking dish, mix everything together and place the peach slices on top
2. Bake for 40 minutes, until the top is golden and oatmeal is set. Let cool for 5 minutes and serve warm.
The children at our nursery love these cupcakes. We made them to celebrate one of the kid’s 1st birthday today and they were a hit! They are vegan, fluffy, moist, and really yummy!
Chunky Monkey Cupcakes!
3 cups whole wheat flour
1.5 cups carob powder
1.5 cane sugar
2 tsp cinnamon
2 tsp baking powder
1tsp baking soda
1 tsp salt
2 mashed, ripe bananas
1 cup coconut oil
1 cup almond milk
Mix everything together, scoop into cupcake wrappers, bake on 170 degrees for 35 minutes or until you can pull a clean fork. Enjoy!

This morning Iona made these wonderful whole grain, carrot, zucchini, oat muffins for a yummy and healthy breakfast for the children at our Tel Aviv vegan preschool. I tried one just now, fresh from the oven and they are delicious :) Here is the recipe if you want to try making them at home:
Whole Wheat Carrot/Zucchini/Oat Muffins (vegan)
Ingredients: (makes 12 muffins)
1 & 1/2 C whole wheat flour
1/2 C oats
1/2 C brown sugar
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 & 1/2 C unsweetened applesauce
1 C shredded carrot (about 1 large carrot)
1/2 C shredded zucchini
Preheat oven to 350.
In two separate bowls, mix dry, then wet, and then combine, adding wet to dry and stirring gently.
Spoon the mixture into a non-stick or sprayed muffin pan. Bake 25 minutes — fork check near end to make sure they are done!

Today we painted, read, blew bubbles, danced, did a lot of pretend play, and played with clay with the kids at our gan. It’s so wonderful to watch children learning while they play, laugh, and interact with each other and with us. Tel Aviv is such a busy city, it’s nice to have a gan where kids feel like they are with family, where the little things are so important; smiles, eye contact, hugs, tickles, conversations, sitting in the sun together, singing off-key to a preschool song, and being there for each other on great days and hard days. Today we practiced sharing in our 3 year-old group, and after a handful of attempts to grab a toy from each other they learned to ask nicely and share when someone asks using words. By the end of the day they were using words to ask for the toys they wanted instead of grabbing, an effective replacement behavior and a successful way to encourage positive behavior instead of using punishment which usually just increases the challenging behavior or creates a new one. Teaching with kindness, patience and reason is important, children respond positively
when taught this way.

We understand how difficult it can be to move to a new country. We are originally from California and made Aliyah last year. Moving to Israel is wonderful and also comes with the struggle of learning how to navigate a new country, new customs and ways of life. Juggling all of this with learning a new language, finding a new job, and building a new social circle can make the first few months or year an adjustment period.
